Soy sauce braised beef, or jangjorim, is one of the more luxurious side dishes in Korea. If you visit famous porridge restaurants in Korea, such as "Bonjuk," you can enjoy thinly shredded jangjorim. It’s absolutely delicious! If you ever visit Korea, I highly recommend trying it—Bonjuk offers a wide variety of porridges too.
Today, I’ll introduce this recipe for soy sauce braised beef. In Korea, many dishes use "Tafelspitz" beef cuts, similar to Germany. When I tried Tafelspitz in Germany, I was amazed at how delicious it was! Jangjorim made with this cut is equally delightful.

Add 600ml of water, apple, Tafelspitz, and chopped green onion to a pot.
Boil the mixture for about 25 minutes.
Remove the beef and cut it into bite-sized pieces. In Korea, scissors are often used, but a knife works fine too! 😊
Strain the pot to remove the solids, keeping only the broth. This will be used for the braising sauce.
Add the sliced beef and garlic to the pot, then pour in the prepared braising sauce.
Optionally, add boiled eggs, quail eggs, or mini mushrooms, depending on your preference.
Simmer on medium heat for about 7-8 minutes, and it’s ready to serve.
