How I cook this at home

I keep this recipe practical for everyday cooking: clear steps, linked ingredients, and small notes from my kitchen so you can make it realistically in Germany too.

My notes for this recipe

Korean thin noodles (somyeon) or medium noodles (jungmyeon) are staples in many dishes. Once boiled, they can be used for a variety of meals like bibim guksu (spicy mixed noodles), banquet noodles, or stir-fried squid with noodles. Here's a simple guide to cooking them perfectly.

Finding the ingredients

You can open unfamiliar ingredients directly from the list. Many Korean pantry basics are easiest to find in Asian grocery stores or online, while fresh ingredients can often be handled more flexibly.

Quick tips

  • Read the ingredients and steps once before you start.
  • Prepare the sauce, vegetables, and toppings first so cooking feels calmer.
  • Adjust the final flavor gently with soy sauce, salt, sugar, or sesame oil.

How I cook it

  1. Boil Water: Add 1L of water to a pot and bring it to a boil.

    • Tip: Unlike pasta, no salt is added to the water.

    • Somyeon: 3 minutes 30 seconds–4 minutes

    • Jungmyeon: 4–5 minutes

    • Tip: Set a timer to avoid overcooking.

  3. Manage the Foam: As the noodles cook, foam may rise and overflow.

    • Add about 1/3 cup of water to calm the foam.

    • This also helps maintain a firm texture in the noodles.

  4. Rinse the Noodles: Drain the cooked noodles and rinse them under cold running water twice.

    • This removes excess starch and improves texture.

  5. Serve and Enjoy: Use the prepared noodles in various dishes like banquet noodles or stir-fried recipes.
